I love this salad in the summer. It is so refreshing and hydrating! I love to serve this as a side with fish or at brunch! The Poppy Seed dressing is great on salads too! I hope you enjoy it as much as we do!
½ Tbsp honey
1 ½ teaspoons white Vinegar
½ teaspoon ground mustard
1/8 teaspoon onion powder
1/8 teaspoon salt
¼ cup canola oil
½ teaspoon poppy seed
1/4 teaspoon lemon juice
3 cups fresh pineapple, cut into 1 ½ inch chunks
2 medium kiwifruit, halved and sliced
2 cups fresh strawberries, sliced
• In a small mason jar, combine the first 8 ingredients. Close the jar with the lid and shake until all ingredients are well blended. Set aside while you lice the fruit. This will help the flavors to meld together.
• In a large bowl, combine the sliced fruits. Drizzle with the dressing and toss gently!
