Caprese Saute


Our family loves tomato season and here on the Eastern Shore that means late July and August, when the tomatoes are at their best. I like to grow a pot of cherry tomatoes on our patio so that I have a never ending supply for our favorite dishes. This Caprese Saute is full of flavor and easy to put together. Team it with Chicken or your favorite fish for that Perfect Meal.


Caprese Saute


2 tsp olive oil

¼ cup cholled shallots

1 tsp minced fresh thyme

2 1/2 cups cherry tomatoes, halved

¼ tsp salt

¼ tsp pepper

4 oz Fresh Monzzarella cheese cut into ½ in cubes.


Heat a large skillet over medium high heat. Add the olive oil, shallots and thyme and saute until tender. Add the garlic and cook for one minute longer. Stir in the tomatoes, salt and pepper and heat through. About 4 minutes. Remove from the heat and stir in the cheese.
