Mama's Macaroni Salad

As I get older I find myself in the kitchen making all sorts of family recipes with my three daughter's. This weekend in particular we we're planning a small picnic for Memorial Day and although my mother and grandmother weren't going to be near for the festivities, they were near to my heart. Everytime I cook or bake something that they made when I was a young girl, it brings back great memories and this recipe in particular always makes me nostalgic. It was made for every picnic and get together we have had over many years and it remains one of my favorites. I am blessed to be able to make it for my family now, and with any luck, maybe you will be adding it to your recipe box as I have done, and cherishing it, and the memories, for many years to come!

Mama's Macaroni Salad


What You Need:


- box of macaroni noodles


- 1 cup mayonnaise


- 1⁄4 cup mustard


- 1 or 2 chopped hard boiled eggs


- 1⁄2 cup chopped celery


- 1⁄4 cup shredded & chopped carrots


- 1⁄4 cup chopped sweet onion


- 1⁄4 cup parsley


- 1 cup sugar


- 1⁄4-1⁄2 cup vinegar


- 3⁄4 cup water


- 1-2 Tbsp corn starch


Mama's Macaroni Salad

1.) Boil macaroni noodles, rinse with cool water and drain.


2.) Prepare chopped celery, carrots, onion and parsley and add to noodles in large bowl.


3.) Add chopped hard boiled eggs.


4.) In a large sauce pan, combine sugar, vinegar and water and bring to a simmer.


5.) Slowly add cornstarch to thicken.


6.) Cook on stove until thick and clear.


7.) Allow sauce to cool


8.) Add mayonnaise and mustard to the clear sause and whisk together until smooth.


9.) Pour sauce over pasta, celery, carrots, onion, parsley, and hard-boiled eggs mixture.

10.) Stir together and chill before serving.

**TIP - You want it to be a little soupy because it will firm up!
