Zucchini Rollups




This recipe is a healthy take on Lasagna Rollups. I use long slices of zucchini instead of the lasagna noodle. It’s a quick and easy meal. (Let your little one help by spreading the cheese mixture onto the Zucchini slice. Served with a salad it is a yummy Vegetarian meal.

Zucchini Rollups


2 medium sized Zucchini Squash cut into slices from top to bottom

2 cups Ricotta Cheese

1 cup Shredded Parmesan cheese

1 ½ cups Mozzarella Cheese (reserve ½ cup to sprinkle over the top)

1 egg

1 teaspoon Italian Seasonings

½ teaspoon Red Pepper flakes

Salt and pepper to taste

2 cups of your favorite Marinara Sauce


Preheat the oven to 350 degrees.

Using a mandolin slicer or a sharp knife slice the zucchini in long slices about 1/8 inch thick. Place one cup of the marinara sauce in a 9 x 11 baking dish. Set aside.

In a medium bowl, mix the Ricotta, Parmesan and Mozzarella cheeses, one egg, Italian Seasoning and Red Pepper Flakes together making sure the egg is mixed in well. Spread one tablespoon of the cheese mixture on each slice of Zucchini. Roll the zucchini slice and place it in the baking dish. Continue the process with the remaining slices and cheese mixture. When all slices have been rolled and placed in the baking dish, put the remaining Marinara Sauce over the top and sprinkle the remaining Mozzarella cheese over the top of the sauce. Place in the oven for 35 to 40 minutes until the cheese is melted and the zucchini rolls are heated through.

Serve immediately.
