Sauteed Zucchini and Yellow Squash with Mushrooms




Every garden should have Zucchini and Squash! We love this summer vegetable fried, sautéed or in Quick Bread mixes. This recipe uses both and another garden favorite – tomatoes!! It is one of my family's favorites as well as a simple and healthy meal that comes together quickly.



Sauteed Zucchini and Yellow Squash with Mushrooms


1 medium sized Zucchini sliced ½ inch thick then cut in half


1 medium sized Yellow Squash sliced ½ inch thick then cut in half


I medium Onion Chopped (I used a Vidalia onion)


2 cups white Mushrooms


5 Roma Tomatoes chopped or 1 cup of Good Pasta Sauce


3 cloves of Garlic chopped


3 tablespoons Olive Oil


1 teaspoon Italian Seasoning


Salt and Pepper to taste


Shaved Parmesan for serving



Saute the Onions and Mushrooms in 3 Tablespoons of olive oil until Onions are translucent and mushrooms are tender. (This will take about 5 to 7 minutes.)


Add the Garlic and Italian Seasoning and saute for 1 more minute. (Don’t let the garlic burn).


Add the Zucchini, Squash, and Tomatoes to the pan and cover.


Allow the mixture to simmer until the Squash and Zucchini have softened but remain slightly firm. (If you cook it too long the Squash will become mushy and lose its shape and texture).


Add salt and pepper to taste and serve.


**This recipe is good served on a pasta like spaghetti or rigatoni (or my favorite – On top of Polenta or Grits). It is also good as a side dish with Chicken or Fish.
