Baked Cod

I was making homemade fish sticks for the freezer (I’ll post that recipe soon) and bought way too much Cod. So I decided to serve it for dinner also. I always have lemons on hand and started playing with the fish stick recipe and came up with this easy recipe. The butter lemon sauce is one that I use on many other types of fish and even chicken. It’s yummy and I’m sure it will become one of your favorites as well!

Enjoy!

Baked Cod

4 cod fillets (about 4 oz each)

3 Tablespoons Butter melted

3 Tablespoons Fresh Lemon Juice

¼ cup all - purpose flour

½ tsp salt

¼ tsp paprika

¼ cracked pepper

2 Tablespoons fresh parsley minced

2 tsp lemon zest

Preheat Oven to 400 degrees. In a shallow bowl mix the butter and the lemon juice. In separate bowl, mix the flour, salt, pepper and paprika. Dip each cod fillet in the butter and lemon mixture and then into the flour mixture, coating all sides of the fillet.

Place the coated fillets in a baking dish which has been sprayed with cooking spray. Drizzle the remaining butter and lemon mixture over the fillets. Bake the fillets for 12 to 15 minutes or until the fish flakes easily with a fork. Mix the parsley and lemon zest together and sprinkle over the top of the fillets before serving.
